This project was conceived afer Areas, an international company and leader in Food & Beverage and Travel Retail in Spain, invited us to collaborate on a new restaurant concept that difered in aesthetics and service from its existing projects portolio, therefore, participating in the AENA 2012 competition for the management of establishments for the Adolfo Suárez Madrid-Barajas International Airport. The location, on the second foor of the airport, was an old 600 SQM restaurant from the company located nearby the access to the Air Shutle and VIP room. Due to its location, the customer profle, which allocated this new service, were executives taking the air shutle fights and professionals working at the airport. The commission consisted in the creation of a space that stayed away from the typical image of airport fast food restaurants, and to invite – this profle of customers – to taste an elaborated menu, where grilled dishes and salads would be the protagonists along with an extended wine list. For this new Project, Sandra Tarruella’s team remodeled fully the existing premises, by working with high communication volumes designed based on a fnishes’ composition, as well as a topographical play of levels that helped organize and gave hierarchy to the space in the dining areas, and kitchen or service zones. The main challenge was to energize and enhance the preparation of dishes and the exposure of products, and be able to stand out- with its quality standards- from the rest of the competition and invite people to come in. The strategy was to divide the preparation of hot foods, cold foods and desserts, as well as beverages, in various locations of the space to polarize the activity and its atractiveness. To achieve this, we kept the existing location of the hot show kitchen, but a new zone for salads and desserts was created, a new white marble bar was made for drinks and cofees, as well as a wine shelf made in iron, wood and deploye metal mesh to display and store wine botles. The existing show kitchen was improved with new black granite counters that provide new preparation spots and service, but in addition, a new integrated bar -fnished in iron and wood – was introduced for those customers who wanted to enjoy viewing the show cooking of the grill. This central part of the whole project and business core is crowned with a large structure made of iron profles and panels of diferent materials such as: reclaimed wood, backlit printed glass, cement, backlit deploye iron mesh and communication screens for special dishes. This high totem serves as a landmark in the airport and as a support for signs made in cutout wooden leters placed over backlit panels. The same mural solution was also applied on the side of the restaurant – closest to the air shutle passenger control – to reinforce its presence and communicate with customers, together with a smaller dining area. Over a gray porcelain 1×1 meter tile foor, which ran across the access area and kitchen, a new oak wood platorm -in a coal tone – was placed where the dining rooms are located. This new zone was organized in small spaces separated by continuous cement and leather benches, where the wood fooring was placed on opposite directions, creating a play of slats that turn up on the wall and create a wooden wall in a backdrop manner. In these new dining rooms, as well as the drinks’ bar and the hot bar, stools and chairs were placed in diferent wood and leather fnishes, mixed with tables or bars that have oak wood tabletops. Also some waiters’ stations were designed in oak and iron. Both, on the front of the premises and throughout the dining zones, some iron porticos were placed and serve sometimes as railings, marking the diferent zones, but without interfering with the global perception of the space. Other times they create the illusion of ceilings that ran across the dining rooms, emphasizing the height and reinforcing the lighting. To contrast with the technical lighting, new ceiling lamps, with wooden screens, were placed randomly over the benches’ backrest and bars.
